Sitting here today approximately three quarters of the way through the 2020 Pandemic, I reflect on all the lives that have been affected by Covid-19 and how much the restaurant industry has changed. We embrace change when we identify it as a path to improvement or growth, we cling to it when it has been forced on us like a tsunami. Change has become the life preserver for the hospitality industry during Covid -19. There are many lessons to learn and I'll patiently wait to get to the end of this to fully reflect and appreciate all of the creative and inspirational methods of survival . In the meantime, check out this vibrant article written by Layla Khoury-Hanold who examines some of the simple changes that were required to keep restaurants afloat during the pandemic
I'm happy to be mentioned along with my fellow dame la Palapa chef/owner Barbara Sibley
